Plant Manager – Butchery

Summary:

The Plant Manager is responsible for overseeing operation of every aspect of the processing facility. The Manager is expected to manage the facility and its staff in a manner consistent with company values. It is the responsibility of the Manager to ensure the facility runs effectively and produces quality product that meets the expectations of the company, its customers and the federal regulations. This position is accountable to the Director of Supply Chain.

Job Duties:

SPECIFIC ACCOUNTABILITIES
• Managing the Day to Day activities of all Butchery operations.
• Assist harvest and production managers to develop & execute production plans that are aligned with demand plans.
• Publish and drive improvement of key metrics such as attainment, cost per lb of production and ensure production is aligned to the needs and priorities of the business.
• Develop and deliver the butchery budget every year.
• Ensure that all procedures of Butchery are running smoothly; this may include the kill floor, cut and wrap floor, VAP production, packing and distribution.
• Hire key positions at the plant and ensure optimal use of employee hours. Management of key staff: Slaughter Manager, VAP Manager, Head Butcher, QA Manager and Inventory Manager.
• Ensure that Organic and other Certification requirements are being met, as well as HACCP and QC functions.
• Oversee inventory system/product tracking software; maintain accuracy and most effective use.
• Manage Butchery annual budget and future budgetary planning.
• Other projects as determined by the Director of Supply Chain, CEO and CFO.

Background Requirements:

DESIRED SKILLS AND QUALIFICATIONS
• In depth regulatory knowledge including USDA multi-species processing, humane handling and organic regulations
• HACCP development, implementation, and maintenance
• GMP/SOPs related to slaughter, fabrication, value added production, packaging and storage
• In depth knowledge of meats-related pathogens and pathogenic controls
• Operational/maintenance understanding of meat processing equipment
• Budget and P&L development, maintenance, and analysis
